Autumn Leaves and a Healthier Pumpkin Bread

 We're still enjoying the fall colors here.


Although I know that one big blustery storm is all it would take to bring down the rest of the leaves.

So, today I took advantage of our unseasonably warm day and headed out for a long, long walk.  
At the end of my walk I pointed the camera up into this maple tree and started clicking.
Before they are all gone I wanted to savor the beauty of the autumn leaves.  I just love when they are showing a bit of yellow, green and orange all on the same leaf.  So pretty. 

 
 Once home I decided to savor the autumn season in another way.
Awhile ago I had come across a healthier pumpkin bread recipe in a Good Housekeeping magazine.  Today was the day to try it out.
The recipe promised that nobody would ever know it had been tinkered with.
The moist texture and delicious flavor made us believe that promise.

It went together quickly and smelled delightful as it baked.
The only change I made was to toss in some chopped pecans.

  1. Those trees are majestic, we had some rain and wind and our trees are mostly bear with a few brown stragglers still clinging. I will check out this recipe, I do love pumpkin bread. xo

  3. It looks like you and I were both baking with pumpkin today. I tired out a 'new to me' spiced pumpkin layer cake (with pineapple and coconut). We'll see if it tastes as good as it looks! Your autumn leaves are looking most beautiful. Ours are mostly gone with the wind!

  5. I just compared the recipe to the Trader Joe's mix (which is very good) and found it definitely healthier, especially much lower in sodium which is great, so am printing your recipe as I write - thanks dear!

    Yes, aren't the trees gorgeous these past couple of days. We were beginning to think they'd never change, but the cool nights and a dash of rain on Sunday night was all it took to bring on the blaze of glory!! Like you Kim, I was out yesterday pointing the camera skyward!

    Happy week - it will be colorful before the leaves come tumbling down big time - we raked a little but know we have plenty of work ahead.

  7. Your leaves are still gorgeous. Our trees are passed their prime and many are completely bare. The pumpkin bread sounds delicious and healthy. A few little changes can make a big difference, can't it?

  9. Your trees are beautiful! We only have one tree left with leaves on it in our yard. I can almost smell the pumpkin bread baking! I recently baked banana and apple bread. I'll have to try the pumpkin next...thanks for sharing!

  10. The color has lasted longer this year. We saw lots of pretty color while we were there so it's nice to hear it's lasting! I'll check that recipe! Sounds yummy!

  11. The trees in your area certainly are gorgeous, Kim. It seems ages since we had fall colours on the trees here. The recipe for the healthy pumpkin bread sounds delicious. I think the yogurt would make it moist. Enjoy your fall days.

  12. Oh I love seeing your trees looking so beautiful. Hope that they hold on through November. Then you'll probably be ready to move on to raking and decorating for Christmas. Glad that you enjoyed a nice long walk, too. Reminds me of Karen! Speaking of whom, I must check to see how she's doing today.

    I checked your link and it does sound healthful, but not weird, which makes me happy. I'm going to try it.

  14. Beautiful Autumn trees! I miss that! Everything always looks the same around here. Except the skies during the winter are every changing so I do enjoy that. I love pumpkin anything. Have been making a vegan pumpkin bread that is really nice, too. No one can even tell the difference. :) Have a wonderful rest of the week. Tammy

  15. I am always on the lookout for healthy and yet delicious quick breads, and yours sounds like one I want to make, especially with yogurt to keep it moist. Thank you for sharing. As for the leaves, I never ever tire of their beauty. Most of our leaves have fallen, so thank you for sharing yours with us.
