Healthy Blueberries

~ Blueberries ~


No doubt you have heard about the many health benefits of eating blueberries. Those tiny little berries are packed full of antioxidants that are thought to be helpful in the prevention of osteoporosis, some cancers, memory loss, heart disease and vision problems. In other words, eat your blueberries ~ they're good for you.





So, I'm taking my own advice today and baking up some yummy blueberry muffins.




Blueberry Streusel Muffins




6 Tablespoons softened butter

2/3 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

2 teaspoons baking powder


1/4 teaspoon salt

2 cups sifted all-purpose flour

1/2 cup milk


2 cups fresh or frozen blueberries



Directions:

Heat oven to 375. In a large bowl, cream together the butter & sugar until fluffy. Beat in the eggs. Add the vanilla extract, baking powder & salt. Mix in half of the flour & the milk alternately, mixing gently by hand. Then add the remaining flour & milk. Stir in the blueberries. Fill greased muffin tins or lined baking cups.



To make streusel topping, cut 2 Tablespoons butter into small pieces and mix it with 2 Tablespoons brown sugar, 1/4 teaspoon cinnamon & 1/2 cup chopped walnuts. Sprinkle the topping over batter. Bake 25-30 minutes until muffins are lightly browned.



Makes one dozen muffins.


I don't know if all of those health claims are true or not, but I sure don't mind trying to stay healthy by eating some of these.



Now the questions is ~ coffee or tea?

  1. OH, Yum! I am definitely going to make this recipe! I have lots of blueberries right now, and we are big blueberry eaters at my home...especially when they are in the form of a muffin! ;o)

  6. Those muffins look amazing! I will definitely try those for sure - I'm going to the store tonight so I will be sure to get any missing ingredients - I was planning to get blueberries anyway because of the very reasons you listed. Raspberries have lots of vitamin C and antioxidants as well. So nice to have them around to add to the top of cereal in addition to having in yummy muffins. So glad you are enjoying your blog and I'm glad that you decided to start your own. It is such an enjoyable, rewarding hobby.
